This Pumpkin Spice Coffee Cake recipe is about to make all your pumpkin spice dreams come true.
This coffee cake has truly converted some pumpkin spice haters into total PSL lovers!
This Pumpkin Spice Coffee Cake will take you to a new place in the heavenly world of fall baking.
The cake is, of course, made with pumpkin puree and lots of warm spices. But then I also added in sour cream to get that moist tang we all want in coffee cake.
Then there’s the streusel. What’s better than streusel?! Here we have a buttery brown sugar pecan streusel loaded with more cinnamon.
The streusel doesn’t just go on top of this cake. There’s a layer in the center that provides a flavorful crunchy ribbon of goodness to each and every bite.
Really, my goal here was to satisfy your cravings for fall flavors while also making your house smell amazing.
Then there’s the icing on top… literally. Just a simple powdered sugar and maple syrup icing does the trick. All of these flavors together are an autumn dream.
But the best part?
How quick and easy this recipe is! You can have a batch of this Pumpkin Spice Coffee Cake cooling on your counter in about one hour. I think it tastes amazing warm. The cake itself can be covered and stored for up to 4 days and it somehow still stays moist.
Though I highly doubt it will last that long.

The Star of the Show: The Pumpkin Puree!
- I used store-bought canned pumpkin puree for this Pumpkin Spice Coffee Cake recipe.
- If you’d like, you could use homemade pumpkin puree in this recipe.
- Note: Be sure NOT to use canned pumpkin pie filling for this recipe – it is not the same thing as pumpkin puree.

Why is There No Coffee in This Coffee Cake?
Generally, coffee cake is meant to be served with coffee, so it doesn’t typically contain coffee as an ingredient! Especially in this recipe where we want the pumpkin spice flavor to shine.
Why is There Sour Cream in This Coffee Cake Recipe?
Sour cream in coffee cake creates the most amazingly moist texture and flavor. If you don’t have sour cream, you can use plain full-fat yogurt instead.
What Baking Pan is Best for Coffee Cake?
This recipe was tested with an 8-inch square metal baking pan. If you’re using a glass or ceramic pan, you may need to extend the baking time by 5 to 15 minutes as those materials cook more slowly than metal. Learn more about Glass vs. Metal Baking Pans in my article here.
My Coffee Cake Sank in the Middle. Why?
- This cake is very rich, so it may sink very slightly in the middle. It shouldn’t be dramatic.
- If you do have a dramatic caving in the center, you may not have baked the cake for long enough.
- Check your baking time and that your oven is properly heating with an oven thermometer.

Can You Double This Coffee Cake Recipe?
Yes! Simply double all ingredients and bake in a 9 by 13-inch baking pan and add about 5 minutes to the baking time.
How Long Can You Store Coffee Cake?
The Pumpkin Spice Coffee Cake itself can be covered and stored for up to 4 days. This cake stays very moist and the pumpkin spice flavor actually improves over time! Make this cake the night before serving it to save yourself time.
Can You Freeze Coffee Cake?
- I’ve had surprisingly good results from freezing the entire baked Pumpkin Spice Coffee Cake in an airtight container, then allowing it to defrost at room temperature before icing and serving.
- Slices will also freeze well – just wrap each slice well in plastic wrap and place inside an airtight container or freezer bag, to prevent freezer burn. Allow slices to defrost at room temperature before icing and serving.

For the glaze::

Preheat the oven to 350°F. Spray the bottom of an 8-inch square pan with nonstick cooking spray.
Make the streusel:

In a small bowl, combine all of the streusel ingredients with a fork until crumbly.
Make the cake:

In a large bowl, stir together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, brown sugar, and granulated sugar. In a small bowl, stir together the pumpkin puree, oil, sour cream, and eggs. Make a well in the center of the dry ingredients, then pour in the wet ingredients. Gently stir until just combined.

Spoon half of the batter into the prepared pan. Sprinkle with half of the streusel. Spread the remaining batter over the streusel. Sprinkle with the remaining streusel.

Bake for 35 minutes, or until a toothpick inserted in the center comes out clean. Glass and ceramic pans will take longer to bake than metal. Cool for 15 minutes.
Make the topping:

In a small bowl, combine the sugar and maple syrup until a thick, pourable icing forms. Drizzle over the warm cake. Cut into squares and serve. Store leftovers, covered, at room temperature for up to 4 days.

Hi! I’m curious, do you have a recommendation regarding canned vs fresh pumpkin for this? I saw your piece on the differences between the two but without trying this before i’m not sure which to go with. Thanks!
Hi Zoe! We recommend using canned pumpkin puree (such as Libby’s brand) for this recipe. Homemade should work just fine, but it can contain excess moisture and therefore impact the texture of the coffee cake if there’s too much excess liquid, so canned is your best bet. I made this into muffins – the recipe made 12 standard muffins. Baked for 20 minutes in a metal muffin tin. Topped with streusel- so good! I didn’t have a metal case on, so now I will get one to make into a coffee cake! loved the pecans in the streusel! A keeper!

Hi Jennifer! We have only tested this coffee cake in an 8×8-inch pan, so I can’t say for sure how long to bake it for. I would recommend shaving about 10 minutes off the bake time to start, and add more if needed. Pay close attention to the sensory indicators in the recipe over the bake time. I hope that helps! This is a delicious coffee cake, so tender and moist, even without the glaze. Your recipes are among the ones I don’t need to try in advance before serving to guests or potluck–I know they will turn out well and there will be no surprises or left-out instructions!
If I only have dark brown sugar on hand, can I substitute that for the light brown sugar or will the extra molasses flavor be too much? Also, can I just not add the pecans to the streusel or should I substitute it for something else?
Hi Stephanie! We haven’t tried that, but using dark brown sugar should work just fine. Yes, as you say, there will be a slightly more pronounced molasses flavor, but I think it will still be delicious and won’t overpower any of the other flavors. Feel free to simply omit the pecans. Can I put together ant night and bake in the morning?
Hi Katie! We haven’t tried that, and I’m not sure how well it would rise after an overnight chill as the baking soda will have lost its strength by then. The flavor is good but it needs much more cooking time than directed. I made in a 8×8 metal pan and I had to leave so I had my husband take out after 35 minutes. It was completely dough in the middle.
Hi Madi! We are glad to hear that you enjoyed the flavor of this coffee cake! Some ovens bake much slower than others, especially if your oven runs a little cool. Most home ovens run 10-25 degrees off, and gas ovens can also be slower bakers than electric ovens. Do you have an oven thermometer? They are inexpensive and really help your baking so much! Always rely more on the recipe’s sensory indicator (in this recipe, bake “until a toothpick inserted in the center comes out clean”) than the bake times, which are guidelines only. Very moist cake. Cooked in glass definitely needed an hour or more to be cooked completely. Started at 40 mins and kept increasing by 5mins at a time which was a little bit of a pain but I’ll know for next time. I used oats in place of nuts and it came out with a nice flavor. Next time i think I will add more cinnamon and nutmeg just because I like a little more flavor personally. Wondering how much cloves I would add if I decided to put them in as I know a little goes a long way. Any suggestions?

I would also recommend checking on the age of your spices – spices lose their potency over time, so the older the spice jar is, the less flavor they will impart. I would recommend adding 1/4 to 1/2 teaspoon of cloves to start – as you say, a little goes a long way there, and you don’t want to completely lose the flavor of the pumpkin and other spices. I made this cake for our Thanksgiving dinner and it was a hit. Very moist and stayed moist even after a couple of days in an airtight container on the counter . I added a small quantity of dark chocolate chips to the streusel as I have a lot of chocolate lovers in the family and also subbed the nutmeg with ground cardamom. Very happy with this recipe and will be making it again.
I would love to make it as muffins without the streusel. Any ideas on how long the baking time would be?

Can this be baked in a bundt cake pan?
Hi Lisa! We haven’t tried that, and I believe the capacity for a typical bundt pan would be larger than the recommended 8×8-inch square pan, so this would change the depth/height of the cake, as well as the bake time. Let us know how it goes if you give it a try 🙂

I quadrupled this recipe and baked it in a large foil pan that was 20.75in (L) X 13in (W) X 5.75in (H) for about 55-60 minutes and it came out perfect (it didn’t sink in the middle at all). I didn’t have maple syrup, so I made a cream cheese drizzle instead. I put parchment paper in the pan; when the cake cooled, I lifted it out (it was heavy), sliced it up and added more drizzle to each of the slices cause they were tall (I had already drizzled the top of the cake while it was warm). My colleagues absolutely loved it. Thank you for sharing!

Hi Sara! Feel free to use parchment or foil for lining your baking pan, leaving an overhang for easy removal. Simply spray the parchment/foil with a little nonstick cooking spray. Both should ensure that, once entirely cooled, you can cleanly remove the whole cake from its pan and slice and serve. Let us know what you think of this cake once you have given it a try! 🙂

Just wanted to let you know that I make the streusel part in my food processor. I usually get pecans from Costco and they come whole, so I pulse them a few times in the food processor, add the other dry ingredients, pulse a few more times, and then add in the melted butter and pulse to combine. Works perfectly. :).

We haven’t tried that, but I don’t see why not! You could also replace them with another similar-sized mix-in, like chocolate chips, or use our streusel recipe from our Brown Butter Coffee Cake recipe. Hope that helps!

I was wondering if anybody’s tried making these into muffins or mini loaf pans? The cake is delicious. However, I want to be able to gift it to people and this size really doesn’t work and a random piece of cake doesn’t present very well. I was thinking if I double the recipe I could make regular size muffins, and or mini loaf tins. Just not sure about the baking time… any advice would help?

A couple of notes from my experience – took longer than 35 minutes to bake (50) and it still wasn’t done in the middle. We ate it anyway – it’s so good! I used an 8×8 metal pan. I will try my digital thermometer next time to test for doneness. Also – I doubled the streusel recipe. (Maybe that affected cooking time?). But the streusel is always my favorite part of a coffee cake – so almost always more for me!!!

I made this today exactly as followed. Although it was good I feel that it lacked the taste of butter. I have made other coffee cakes before from other recipes and the ones made with butter tastes better. So I have to give it a four star.

I made this gluten free by substituting the all purpose flour with King Arthur Gluten Free All Purpose flour and it’s perfect!!! The texture of the cake is not too dense like most gluten free cakes. Also, I used cold butter in the streusel. Put all the streusel ingredients in the food processor.

This is an outstanding cake! It’s extremely moist and flavorful. It was a big hit at my Bible Study potluck. I made this gluten free by substituting Bobs One for One flour for the all purpose flour. I made this with a homemade pumpkin purée. It turned out beautifully and so tasty! I followed the recipe but left off the glaze. It was so moist that I didn’t miss it.
Absolutely scrumptious! Moist and delicious. I used fresh pumpkin which I baked in the over then pureed, I added a maple flavored sour cream and lightly toasted the pecans. Once cake was cooled I cut small squares and individually wrap them to keep in the refrigerator for an any time snack. A very lovely coffee cake!

This is honestly my favorite pumpkin based item I’ve made this fall. When I tried it slightly cooled from the oven, I wish I would have never made it or known about it. It was gone in 3 days time from my husband and I fighting over every crumb. So easy and so delicious. I made these this weekend. They were greatly loved by all. I was concerned that my batter was a bit dry. It did not pour. It was sticky, almost like a cookie dough but lighter. When put it in the pan it did not pour so I scooped out blobs of batter. Then I had to mash and spread the batter by hand to get the batter to cover the bottom of the pan. Is this normal? Should I have added more sour cream? Would milk be warranted? Thanks.
Hi Geoff! Oh no, that doesn’t sound right! I’m so glad it still turned out delicious and it was enjoyed by your guests, but something definitely went wrong somewhere along the way there! The batter should be thick, but pourable and easily spreadable. How do you measure your ingredients? By volume (using cups), or by weight (using a digital kitchen scale)? When measuring by volume, it’s so easy to mis-measure ingredients, especially flour, and end up with a batter or dough that’s too thick or the wrong consistency. Tessa talks about how to best measure ingredients to ensure accuracy every time, in this article here! Feel free to respond if this wasn’t the issue, and we can further troubleshoot together! I used a scale for every ingredient that gave the option. I agree with above comments that no way would this batter pour. Cake looks beautiful right from the oven so I’m keeping my that it’s a keeper.

Hi there , This looks delicious! I was wondering if I could make this Vegan? can I use (Flaxseed egg) in place of the eggs? & Vegan Butter? (I have a Coconut oil based butter) & I Don’t have Brown sugar, But I’d like to use Coconut Sugar instead ? (Bec it doesn’t spike glycemic index) To me , it tastes just like Brown sugar but maybe not as sweet ,& I believe it’s the same ratios? Oh , and finally I don’t have Maple Syrup But I do have Maple Cream (it’s just Whipped Maple Syrup, & just a little bit thicker? Oh ,& I don’t have a good Vegan Sour cream but I do have Unsweetened Coconut milk/cream based Yogurt, Would this work ? I really appreciate this recipe & your help w/this! I love all of these flavors & am so excited to try this (I am fairly new at being Vegan) & the hardest part for me is replacing Cheese , lol ! This is Perfect for Fall & a nice treat ,! It’s totally up to you when you glaze it – it will absorb slightly into the cake once it’s sat for awhile, but it’s fine to do it an advance regardless. This was delicious! The soft, moist texture couldn’t be more perfect. It was right between a crumb cake and pumpkin bread—a nice light pumpkin flavor that wasn’t full on pumpkin overload. Highly recommend! Next time I make it I’ll double or triple the crumb streusel part because you can’t have too much of that!

I doubled the recipe and swapped the vegetable oil out for coconut oil which I melted before adding and it still turned out perfect! since I doubled it I think it took a little longer to cook, after the 35 min at 350 I turned it down to 340 and cooked for another 10 min (in a metal pan) and it was cooked perfectly, moist (but cooked) in the middle and not crunchy on the edges!! but it was also really easy to make!!! 10/10 would recommend, especially if you like pumpkin spice but don’t want it to be overwhelming!!!
Shana, what size pan did you use? I’m planning on making this, but also need to double and was wondering if I maybe already had the right size pan on hand already before I run out to buy another.
Can I use a bundt pan for this?
Hi Layla! We haven’t tried that, and I think a regular bundt pan might be a bit too large for this recipe – but feel free to give it a try! This recipe was written for a square metal 8×8-inch pan. Let us know how it goes when you give this coffee cake a try! 🙂
